Nathan’s Insane Deba
This rustic, hand-forged fish-knife from Japan is one of the most insane pieces of smithing I have ever encountered, and owner Nate is a lucky man to have found such a beauty. At over 3/8” thick, it is definitely a boning/prep knife; but what made it stand out for me is the quality of the forge-work. While very fine grain structure is the hallmark of a forged carbon-steel blade, this one is so nice that it was already shave-worthy -even at the earliest passes on my rough stones-.
See if you can spot the sweet frosty-to-mirror finish at the cutting edge. Traditional style polish with one continuous cutting edge - no hard bevel.
