SUSHI GRADE SHARPENING - ENTIRELY BY HAND

Shear Emporium does a traditional Japanese-style waterstone polish for Fine Chef's knives, completely by hand. This is not a quick, rough sharpening on a gadget, grinding wheel, belt sander, or buffer. Your knives will be made truly razor-sharp. By hand, on waterstones. All defects will be re-ground correctively.

And, whether you are a professional - or home - Chef, we will even customize cutting edge / bevel angles for best performance and left or right hands.

Your fine cutlery will, in fact, be far sharper than when brand new!
